Comfort Zone BBQ

A couple weeks ago I had to step out of my comfort zone to cook for about 20 strangers.

It was my grandson’s Quincy’s birthday and I was nominated to cook on the grill the night before.

Aww man, my anxiety was on overload but I had to step up and flex my skills on the grill for those fine folks.

I am a control freak, I like to play out different scenarios in my mind before attempting the task at hand, what if I undercook this meat? what if I over-season the meat?

Needless to say I was a nervous wreck.

That morning I got up and helped my daughter Tia season the chicken and pork, I paid close attention to detail and I was very satisfied with the results.

When we arrived at the party location I set up the grill and waited until the coals were white.

I don’t know if it was the grill or charcoals but this grill was extra hot and it was no joke!

I placed the first batch of pork on the grill and it was cooking at a high rate and I began to get concerned.

Ya boy was flipping that pork like a acrobat, making sure they wouldn’t turn into a piece of charcoal itself.

My daughter was my helper but she had to run to the store to get bags of ice and I didn’t know where the bbq sauce was so I had to improvise and take the pork off the grill and place the chicken on there to start its process.

Somehow it worked, I didn’t over cook the pork or chicken, my daughter made it back and handed over the bbq sauce so I finished the process of spreading sauce over the meats and completing the task at hand.

I received compliments and everyone was happy, overall the party was a success and I am now motivated to try a similar event again, wish me luck!
